There is a particular pleasure in dining somewhere you do not have to leave. A private chef in your Phuket villa turns your own terrace into the best table on the island: no booking, no drive, no dressing for dinner, and a view you have already fallen in love with. It sounds extravagant, and it can be, but it is often the most sensible way to eat well on a villa holiday. Here is how it actually works.
What in-villa dining involves
The arrangement is simpler than most people imagine. You agree a menu in advance, the chef arrives at your villa with everything required, cooks in your kitchen or at the barbecue, serves you on your own terrace, and leaves the kitchen exactly as it was found. Depending on the occasion there may be a server as well as a chef, and the whole thing can run from a relaxed lunch to a full multi-course dinner.
You are not hosting. That is the part worth understanding. Everything from the shopping to the washing up sits with somebody else.
When it beats a restaurant
A private chef is not always the right answer, but it is decisively right in certain circumstances. With small children, who eat early and travel badly at night. For a large group, where a restaurant table becomes a logistical event. On a celebration, where you want the run of the place rather than a corner of someone else’s. And on the evening you simply cannot face leaving the villa, which on a good holiday arrives sooner or later.
Conversely, if the pleasure of the evening is going somewhere, go somewhere. In-villa dining is for the nights when the villa is the destination.
Choosing the menu
The best in-villa meals are shaped around the group rather than lifted from a card. A Thai menu cooked properly is the obvious pleasure here, and a good chef will pitch the heat where you actually want it rather than where a tourist menu assumes. Seafood on the barbecue, eaten beside the pool, is hard to improve upon. Long, slow, shared dishes suit a table of family better than plated courses.
Flag every dietary requirement, allergy and strong dislike when you book, not on the night. It is the single thing that most affects how good the meal turns out.
The practical questions to ask
Establish what is included: the chef’s time, ingredients, service, equipment and clearing up may be bundled or charged separately. Ask how much notice is required, since most kitchens want at least a day and considerably more for elaborate menus. Confirm where the meal will be served and what happens if it rains. And ask about children’s portions and timings if you need them, which any good operation will handle without blinking.
Making an evening of it
The detail most people miss is the setting, which costs nothing and changes everything. Dinner beside a lit infinity pool, with the sea going dark beyond it, is a different evening from dinner at the indoor table with the lights on. Ask for the table to be set outside, ask for candles, and time the first course for shortly after sunset. The kitchen will have thought about the food. The evening is yours to shape.
